Crab Bruschetta
Bruschetta was originally toasted bread, rubbed with garlic and drizzled with olive oil. This version is a delicious variation that can be served as a light meal or as appetizers.

Crab Bruschetta Ingredients
| 1 | baguette |
| 1 can (120 g) | Clover Leaf Chunk Crabmeat, drained |
| 1 cup (250 mL) | diced and seeded fresh tomatoes (1 large) |
| 2 | cloves garlic, crushed |
| 1 tbsp (15 mL) | olive oil |
| 1 tsp (5 mL) | lemon juice |
| 1/4 cup (50 mL) | torn fresh basil leaves (or 1 tbsp/15 mL dried basil) |
| 1/2 cup (125 mL) | shredded feta or mozzarella cheese |
Preparation
- Slice the bread in half lengthwise and broil until lightly browned.
- In a medium bowl, mix crabmeat, tomatoes, garlic, oil and lemon juice; stir in basil. Spread mixture over toasted bread; sprinkle with cheese.
- Broil 2-3 minutes or until cheese is melted.
- Makes 4-6 lunch servings or 16 appetizers. Hints
Substitute 2 tbsp (30 mL) grated Parmesan cheese for feta. Prepare crab mixture a few hours ahead; then top bread and broil at serving time.
