Athena's Greek Pita
Here's a refreshing sandwich with a Mediterranean flair. Pre-chop ingredients so your kids can put it together as an after-school snack.

Athena's Greek Pita Ingredients
| 1/2 cup (100 mL) | chopped tomato |
| 1/2 cup (100 mL) | chopped cucumber |
| 1 tbsp (15 mL) | chopped red onion |
| 2 tbsp (30 mL) | plain yogurt |
| 2 tbsp (30 mL) | mayonnaise |
| 2 tsp (8 mL) | lemon juice |
| 2 | lettuce leaves |
| 1 | pita bread round, halved |
| 1 pouch (85 g) | Clover Leaf Rip'n Ready Pouch TM, Albacore Tuna |
| 2 tbsp (30 mL) | sliced black olives (optional) |
Preparation
- In a small bowl, blend tomato, cucumber, onion, yogurt, mayonnaise and lemon juice; toss in albacore.
- Place a lettuce leaf in each pita half.
- Mound albacore mixture into pitas and sprinkle with olives, if desired.
- Serve immediately.
